The green revolution is gathering pace but for many people being green is more of a unique selling point for their business than a genuine passion.
But Lambert’s restaurant, in Balham High Road, cannot be accused of such a policy as they still use the same green principles they were practicing when they opened six years ago.
The restaurant scooped the Green Business prize at the recent Green Business Awards, held by Wandsworth Council, and also represented Wandsworth at the Green Guardian awards.
Joe Lambert, the restaurant’s owner, said: “I would describe the style of food we serve as British, not modern British or traditional British but just British.
“I’m from Lancashire but I started working in Glasgow when I was a student and then moved down to London. We opened the restaurant in 2002 and celebrated our sixth birthday a couple of weeks ago.
“I see a lot of business who extol their green virtues when they are only slightly green. Then I realised that what we did was actually pretty significant.”
Lambert’s is not only passionate about ethical produce but also about maintaining the environment.
They use local suppliers, many of them small family firms, and try to use only the finest, often organic, seasonal ingredients.
Mr Lambert said: “It’s just something we’ve always done right from the word go. I find that by concentrating on small suppliers, we find people who have much more passion about what they are doing.
“The produce is so good, so natural that it improves the quality of the dish so you have to do much less whether you’re using a cow or an onion. Good produce has a spin-off effect in that it is also good for the environment.
The signature dish of the restaurant is their specialty Farmer Sharp’s Herdwick mutton, wether and lamb, three types of lamb cooked in three different ways.
